Today is my muffin man’s 6th birthday. His party is Saturday so I’m making his annual “gift cookie” for the party guests. This year’s theme is a “Monster Bash”, not sure how this will translate into sugar cookies but we’ll see.

Kitchen Re-do
Soooooo, I haven’t forgotten about my “Kitchen Re-do. These random “re-do” pics are just because I’ve been stuck on finding the light fixture I want for this wall. This picture shows my cute chicken (thanks Sherry), my lanterns and you can kinda see the current light fixture on the wall that I’m wanting to replace. I want one of those exterior wall lights that you might find on a barn but I can’t find one big enough. I do have one in mind that I just bought from Lowe’s so hopefully it will be “it”. Hope your Monday is going well!! 😉

Tree House Bed by Jason Benson
Just When you thought the braggin’ was over . . . the “Dynamic Duo” strikes again!!
Oh my word – Jason seriously blew me away!! He designed and built this Tree House Bed around Owen’s old bed, hung a Swing & built a Tree Book Shelf around the soffit in the corner of Owen’s room. Tara painted all the rolling hills on the walls by hand! The Bookshelf that’s in the bed is actually a “secret entrance” to the area below. Jason attached the bookend to that darker piece of wood which inserts into the notch on the side. When Owen wants to enter his secret “Boy Cave” he just slides the bookend to the right and the door swings open!!! SERIOUSLY?!?!Unbelievable!! So proud of you guys!!! Great job Jason & Tara!!!
Wow Me Wednesday . . .
I went crazy simple this time because I knew I’d be busy this past weekend with the surprise party. I’ve been wanting to try this recipe that a friend of mine emailed me. It’s “Honey Cinnamon” butter and it’s very much like the butter at Texas Roadhouse! I made it Friday night and took it to the party – we used it on cornbread muffins . . . YUMMMM!!
1/4 cup powdered sugar 1/4 cup honey 1 teas. cinnamon 1 stick of softened butter Whip butter (I used the “wisk” attachment on my kitchenaid) for 30 seconds. Add sugar, honey & cinnamon. Whip till smooth (start slowly at first so the sugar doesn’t fly out of your bowl).Surprise!! cont. . . .

Surprise!!
We had a surprise “John Deere” birthday party (at Jason & Tara’s house) on Saturday for Matthew, Amie’s boyfriend & John Deere addict. He’s in the Air Force and getting deployed. He leaves 2 days before his birthday so we thought it’d be fun to surprise him. His birthday is close to Owen’s and we told him it was Owen’s birthday party so that when he saw balloons and streamers he wouldn’t be suspicious . . . . lol, he was stunned!! It was great!!! It took him a bit to wrap his head around why HIS family & friends were at Owen’s birthday party!! I love how Jason is cracking up and Amie is hiding! LOL . . . Alex & Heidi are the ones responsible for introducing Matthew & Amie . . . way to go guys!!! I wanted to share the “how to” John Deere candy labels with you – super easy. They’re actually “return address labels, #5160 and they will “perfectly” wrap around Hershey Nuggets (not Hershey Treasures). Just add your own verbiage or image!! P.S. I took so many pictures we’ll have to do this party in 2 posts 😉

1st Day of Spring!
I am sooo excited that TODAY is the first day of spring!! I am tired of shoveling snow!! I am tired of 30 degree temps!! My aspen trees already have buds on them – they are ready for spring too!! Spring is so pretty here in Colorado. All the brown dormant color starts to turn green and you get the “itch” to start planting flowers BUT you don’t! When I first moved here, 19 years ago, I was told that you don’t plant flowers until Mother’s day!! Spring weather will suck you in and make you believe, oh it should be fine to plant now, and then you will get another freeze! So we wait – chompin’ at the bit for another 2 months. Spring time is exciting because it’s full of anticipation for a F.U.N. summer and I AM READY!! 😉
Wow Me Wednesday . . .
This week it’s “Roasted Red Pepper & Goat Cheese Alfredo”. Very easy & very good, next time I think I’ll add some chicken, maybe some asparagus too. And can I tell you how excited I was when I realized I got to use my immersion blender again!! Oh and I used shaved parmesan – I just couldn’t spend the $10+ for the Parmigiano Reggiano! Anddddd for those of you in Colorado . . . . yes that is a slice of sourdough bread!!!! I found that “Sprouts” makes their own San Francisco Sourdough Bread and it is VERY GOOD!!!! The link below has step by step instructions to make this very yummy dish . . .
2 whole red bell peppers
2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup fat free half & half
4 oz. garlic & herb goat cheese
2/3 cup grated parigiano reggiano cheese
1/2 lb. linguine, cooked to al dente
salt & pepper, to taste
Preheat oven to 500 degrees. Place red peppers on baking sheet and bake 20-30 minutes until peppers are charred. Remove from oven and cover with foil 10 minutes. In the mean time, saute onions and garlic in olive oil 7 minutes or until tender. Pour in half & half, goat cheese, salt & pepper. Stir to melt goat cheese into sauce and keep warm over low heat.
Uncover peppers, peel off skin and remove stem and seeds. Chop into large pieces and place into sauce along with parmesan cheese. Stir to melt cheese and remove from heat. Pour sauce into food processor and puree, or use an immersion blender. Place back into hot pan and toss with cooked pasta. Taste and adjust seasonings.
