I got to break in my new cast iron pot with a batch of homemade chili. It was really good & crazy simple! Took it over to Jason & Tara’s to watch the Broncos last night with them and Owen in the “movie room”. The only way to watch a game – on a huge screen!!! (Jason made the TV/movie screen.)

Ta . . . daaaaaa!!!!
Finally! The ping pong table is DONE, UPRIGHT and ready to go! Amie & Justin came down yesterday so we christened the ping pong table with over 10 games in which Amie beat our butts!!! Between the 3 of us we must have played at least 15 games. I guess my ping pong skills are not at great as I thought, need more practice! We had a great time. Way to go Amie!!
OMGeeee . . . . . . . . I have a Daughter-in-Law!
Jason and Tara have been together about 2 years. They bought a house together earlier this year. So Jason calls me last night, “Mom, guess what Tara & I did today?” . . . me, “aaaaaa . . . ohh I don’t know – what?” (It was Tara’s birthday yesterday, they were at work yesterday, soooo??) Jason, “We got married” . . me, “no you didn’t” . . . Jason, “Yes we did” . . . me, “aaaaa NOOO YOU DID NOT!” . . . Jason, “Yes we did, I swear, we went to the court house after work and got married” . . . me, ” OMMMMGEEEEE”. I was shocked and excited at the same time! I told Tara, “oh my gosh, I’ve never had a daughter-in-law before”! We just laughed and I told her – oh my gosh that means “muffin man” is officially my grandson!! Yahoooooo!!! Our family just increased by 2 overnight!!

“It’s a Dot” . . . Update
Regarding my “It’s a Dot” . . . that “Bend in the Road” . . . I wanted to give you an update on how things are going. Yesterday was my 15th treatment so I’m now at the “half-way” mark, 15 more to goooo. Things are going well, just a little bit of sunburn but other than that I feel great. One of my friends told me about Coconut Oil. I checked it out on the internet and was surprised to learn what a miracle cure it was and soooo many different uses for it! I am using it for my sunburn and it seems to be helping. My drives back and forth downtown have been smooth, my 1pm time slot was a blessing. And have I mentioned lately how much I “love” valet parking, LOL. The valet attendants are so nice – since they don’t take tips I’ll have to make them some cookies.

Peach Salsa! Yummmmm
Sooooo I had a few peaches left over from my jam batches. I just put all of this in the food processor & voila!! Peach Salsa – dang it really was crazy simple (I know my sister is laughing at me right now):
1 16oz. can whole tomatoes (kinda drained) 1/2 bunch of cilantro juice of 1 lime 2 peaches, peeled & pitted 1 jalapeno without seeds (because I’m afraid) 1/4 red onion (yields about 3 cups)Pulse til’ your heart’s content! These are reallly good chips by “Tostitos”! I just realized that I use a lot of exclamation marks. I’m just that kinda girl! 😉
Palisade Peaches!
I just lovvve peach jam on pancakes. Every summer I split a flat of peaches with a friend. So one batch down, one batch to go. If I have a few left over I’m going to try peach salsa. I’ve never made salsa before but everyone says it’s sooooo easy. I’m not posting the recipe for my peach jam because I use the recipe for “cooked jam” from the instructions in the Certo box. My only suggestion is to have everything pre-measured before you begin the cooking process. Once it starts boiling everything goes pretty fast from there. If you’ve never made jam before I’d encourage you to try it. It seriously is not hard. Any kind of berry jam is also very good.
