Room Re-Do . . .

Room TrinketsWell I’m a bit closer to starting my room re-do.  I have collected some new trinkets and picked my color scheme.  I decided to go a little more feminine in my “Country Chic Room” . . . my bedroom furniture is pine and the new color scheme is white & gray with silver & a bit of pink accents. The 2 paint chips in the pic above are my colors “Cathedral Gray” & “Pewter Ring”.  Pewter Ring is the darker of the two and I’m considering doing an accent wall with it & using it to paint the inside of my closets . . . hmmmm.  The colors are Behr paint and Behr is always my 1st choice in paint.  Our weather is crazy gorgeous right now soooooo maybe I’ll paint this weekend.  Just don’t hold me to it . . . if I actually go buy the paint that will be one step closer!!!

Home Made Granola Bars

granolaI know this won’t shock any of you, but I found this recipe on Pinterest.  In my quest to not buy processed foods/snacks I thought I’d try making my own granola bars.  I’m not a big breakfast person, it takes me awhile to really “wake up”.  Usually about 10:30am I’m thinking I want something small to eat while I drink my coffee.

This recipe called for 4 cups of “quick oats” NOT “rolled oats”.  Ok, seriously, #1 – what’s the difference  . . . I thought oatmeal was oatmeal . . . #2 – I only had 2 cups of oats.  The label on my container said “Old Fashioned Oats” but under the “ingredients” it did say rolled oats, bummer.  So in my determination to make these things I Googled what was the difference between the two.  What I took away from the definition was that the quick oats were smaller & absorbed better sooooo, I thought to myself – I’ll just make them smaller so I chopped them up – totally made sense to me.  The problem was I still only had 2 cups. Long story shorter . . . I made them anyway. They are delicious!!!! I’m going to buy a new container of “quick oats” and make this recipe again. Very tasty!!! Here ya’ go . . . . (I only had creamy peanut butter & I added chopped almonds)

INGREDIENTS

1/2 cup honey
1/3 cup packed brown sugar 
1/4 cup peanut butter (crunchy)
1/4 cup unsalted butter
4 cup Quick Oats (not rolled oats)
2 cups crispy rice cereal
3 teaspoons vanilla   
*Makes 28 bars
 
DIRECTIONS

In a large bowl, stir crispy rice cereal, quick oats together.  In a medium saucepan, combine honey, butter, and brown sugar. Bring to a boil over medium-high heat then bring the temperature down to low, and simmer till sugar dissolves. Remove from heat. Pour in vanilla and stir.  Pour hot butter/sugar mixture over dry ingredients. Stir until all ingredients are moistened. Press into a parchment-lined jelly roll pan.

Press the granola bar mixture as closely and as tightly together as you can into the pan at about 1/2-3/4 inch thickness. Any thinner, and the bars will not hold together. Cool on the counter till they reach room temperature. Cut into bars. Wrap in plastic or store in a ziplock bag.

New Spin on Canvas Art

I finally put away all my Christmas stuff which meant I needed to change out my canvas art with the winter pics.  My friend Maurene suggested putting the canvases in a frame . . . great idea.  I found these two 8×10 frames at Home Goods, removed the glass and cut the backs off.  So it took a bit of persuasion with my rubber mallet to get them in but I did.  I guess I was a tad bit aggressive on one of the frames . . . bummer . . . it came apart in the corners but nothing a little old Elmer’s Glue and a bungee cord couldn’t fix!!! LOL

Super Bowl Weekend!

bbqDon’t let the exclamation mark in my title deceive you by thinking that I’m soooo excited about the super bowl . . NOT, but it is a big deal for my friends & family in California . . . Doug Bailey can you even sleep at night with all your excitement???? Wish I could watch it with you guys, Angel are you making your awesome guacamole dip??? Anywho, I will be watching and rooting for your 49er’s . . . ahhh I remember the good ole’ days with Joe Montana, Dwight Clark & Jerry Rice!!

Thought you all might like to be introduced to the absolutely best, most awesome bbq sauce that you will EVER taste!! Seriously I am sooo addicted to this stuff.  Put it on bbq chicken, country ribs, chicken bbq pizza, mix with ranch dressing for bbq chicken salad or for game day get one of those mini crockpots and fill it with little “smokies” and a bottle of this magic sauce . . . . yummmmmm!!! Go niners!!!

Spice Cookies (not really . . . )

So in my attempt to eat healthier I found this recipe on the internet (no not Pinterest).  I still have a need for a cookie now and then, or everyday!  I quit buying cookies from the grocery store some time ago.  I decided that if I wanted cookies I’d have to make them.  I found this cookie recipe and it will blow you away. It’s not sugary, it’s totally healthy, full of protein and actually taste like you took a Spice Cake mix and added chocolate chips & walnuts to it.  You MUST try this sometime, you will be presently surprised! I love it when I’m pleasantly surprised . . LOL

cookiesPinto Bean Cookies

1 cup brown sugar
1/2 cup Crisco (I used coconut oil)
2 large eggs
3/4 cup pinto beans, mashed
3/4 cup applesauce
1 teas. baking soda
1 teas. baking powder
2 1/4 cups all-purpose flour
1/2 teas. cinnamon
1/2 teas. ground cloves
1/2 cup chopped nuts (I used walnuts)
1/2 cup chocolate chips or raisins (helllloooo chips!)
 

Cream Crisco, sugar & eggs, add mashed pinto beans & applesauce. Beat till well combined. Add dry ingredients, beat till smooth. Stir in chips & nuts. Batter is a bit gooey. Drop by teaspoonful on greased cookie sheet (I used parchment paper). Bake at 375 degrees for 15 minutes. Cool & enjoy!!

New Year’s Jar – 2013

New Year's JarI found this idea on “Pinterest” (of course . . ).

Start the year with an empty jar and fill it with notes about good things that happen. I always “think” I’ll remember everything, but seriously after turning 50ish . . . good luck with that! Then on the next New Year’s Eve, empty it and see what awesome stuff happened that year. Good way to keep things in perspective.

Cute gift idea and you still have time to give them out . . . add a cute little ribbon and tag (because it’s all about the presentation – LOL)!

Girls Night & Great Recipes

Had the girls over Friday for “Girl’s Night” at my house.  Everyone brought something to share and it’s always a great time to try out new recipes. I made the cupcakes: regular white cake box – I like to add almond extract but I was out soooo I added some Amaretto. White Chocolate Clusters

I found this recipe on Pinterest. The “Girls” are coming over tonight for a little Christmas Get-Together so I made them the other night. Delicious & very rich – I would totally cut this recipe in half next time but here ya’ go:

2 cups Rice Krispies  cereal
2 cups dry roasted peanuts
2 cups miniature marshmallows
1 cup peanut butter
2 packages white chocolate chips (12oz. packages)
 

In large bowl, combine cereal, peanuts & marshmallows. I use a glass bowl over a pot of boiling water to melt the chocolate chips & peanut butter (she uses the microwave). Once melted, add to cereal mixture and drop by tablespoon onto waxed paper. Let set until firm, about 2 hours. Store in airtight container. Makes 64 clusters.

Next time I would “half” this whole recipe and instead of 1/2 cup peanut butter I will try 1/4 cup peanut butter. I found the original recipe on:  plainchicken.blogspot.com

Christmas Ideas . . . . 6

Everyday jars on the left . . . at Christmas time I bring out my old white ones and put red ribbons on them. I bought the red platter at Home Goods a few years ago and who doesn’t need another nutcracker . . . I kind of have a small collection of nutcrackers, I just love them.
