Wow Me Wednesday . . .

cornOK, I was totally WOW’d.  I’ve seen this on Pinterest (of course) and had wanted to try it . . . I did last night!  2 ears of corn in the husk – 8 minutes! Not one piece of silk on that ear!! Amie & I went to see this over the weekend.  Oh my word – very intense!! It was great – if you didn’t read the book – you really don’t know what’s going to happen. Ben Affleck was great!! Loved it!!! I’m giving it an A!

Birthday Weekend!

Amie came up this weekend and we celebrated my birthday with the kids, did some shopping and went to the movies.  Tara made this crazy amazing White Chocolate Truffle Cake, and they had flowers for me & a gift card to Lowes!! Miss Amie bought me a DeWalt Orbital Sander (yes, I asked for this)!!! I had to share this picture of our little Belle – she loves her animal book!!! A wonderful birthday weekend with family!

corn dip Yes, I realize it’s Friday, but I wanted to get this to you in time for your Sunday Football Games!!!!  Yum & super simple, I made it when my family was here visiting.  Maybe next time I’ll top it with olives or crumbled bacon!!

Hot Corn Dip

Ingredients:
Cooking spray or butter, to grease
Two 11-ounce cans Mexican corn, drained
Two 4.5-ounce cans chopped green chiles, drained
2 cups grated Monterey Jack cheese (about 8 ounces)
2/3 cup grated Parmesan
1 cup mayonnaise
Corn chips, for dipping (I used Fritos Scoops)

Directions:
Preheat the oven to 350 degrees F. Grease a 9- 13- by 2-inch casserole dish.
In a medium bowl, mix the corn, chiles, cheeses and mayonnaise until fully combined. Spread the mixture in the prepared casserole dish and bake, uncovered, until bubbly around the edges, 30 to 40 minutes. “Parenthood” Thursdays on NBC

I absolutely loveeeeee this show and I’m sooooo sad this is it’s last season!  The cast is wonderful and they touch on regular family dynamics.  It’s engaging, makes you laugh, makes you cry and sometimes makes you think!  Anddddd this backyard picture . . . yeah, that’s my dream in my farmhouse backyard!!  Well one of my dreams for my farmhouse! 😉

My New Rooster Plates!

I went down to the “Springs” this weekend to see Amie & Matthew.  Diane (Matthew’s mom) invited us to go with her & her mom to the “Chef’s” warehouse sale.  Chef’s does this sale twice a year & it’s just like a “Black Friday” sale.  Everyone lines up outside until it opens.  This was my second time & you never know what bargains await you!! LOL  I found these “Paula Deen” salad plates and I love them!!! Just $1 each!!! And I already had the brownish plates – tooo cute & sooooo perfect for my future farmhouse!!!

Ok, this could NOT be simpler!! Seriously!!

Pork Roast

Crock Pot Pork Roast

1 boneless pork roast
1 can cola (your choice)
1/2 bottle BBQ sauce (your choice)
Lawry’s Season Salt
 
Rub your entire roast with Lawry’s, place in crockpot, add 1 can cola, add 1/2 bottle BBQ sauce, cover & cook on low for 4-6 hours (I did 6 hours).  Pull apart and place back in crockpot for about 30 minutes to soak up the juice.  Serve along side some yummy mashed potatoes or make pulled pork sandwiches!!! Enjoy 😉
