Kitchen Re-do, Jars
I wanted to keep these jars in my new Farmhouse design because I like using them a Christmas time. I originally found them at Walmart in the candle isle. Took me awhile to figure out what to put in them but came up with dry beans and I love them! Hmmm that lid is crooked.
Wow Me Wednesday . . .
I decided a few weeks ago to start trying new recipes. I have a bunch of cookbooks (2 are The Pioneer Woman’s) and a ton of recipes pinned on Pinterest. I don’t know if I could commit to EVERY Wednesday but will post new recipes that I try out on my new “Wow Me Wednesday” posts. “Spicy Dr. Pepper Pulled Pork”
I won’t even go into the story of finding a stickin’ pork shoulder butt . . . I ended up using a pork sirloin roast. Couldn’t find a 11oz. can of Chipotle Peppers so I used a 7oz. can. I had bought 2 of them but was afraid it might be too spicy. Her description of “clearing your sinuses” was enough to scare me off, lol!! I used the pork in soft tacos and it was very yummy!! Would totally make this again – super simple!!
- 1 whole Large Onion
- 1 whole Pork Shoulder (“pork Butt”) – 5 To 7 Pounds (mine was 4.5 lbs.)
- Salt And Freshly Ground Black Pepper
- 1 can (11 Ounce) Chipotle Peppers In Adobo Sauce (I used one 7oz. can – afraid of too much heat)
- 2 cans Dr. Pepper
- 2 Tablespoons Brown Sugar (the cookbook said 4 packed TBLS)
Preheat oven to 300 degrees.
Peel the onion and cut it into wedges. Lay them in the bottom of a large dutch oven. (Love my dutch oven pot!!)
Generously salt and pepper the pork roast, then set it on top of the onions in the pan.
Pour the can of chipotle peppers over the pork (include the sauce.) Pour in both cans of Dr Pepper. Add brown sugar to the juice and stir in.
Place lid tightly on pot, then set pot in the oven. Cook for at least six hours, turning roast two or three times during the cooking process. Check meat after six hours; it should be absolutely falling apart (use two forks to test.) If it’s not falling apart, return to the oven for another hour.
Remove meat from pot and place on a cutting board or other work surface. Use two forks to shred meat, discarding large pieces of fat. Strain as much of the fat off the top of the cooking liquid as you can and discard it. Return the shredded meat to the cooking liquid, and keep warm until ready to serve. (You can also refrigerate the meat and liquid separately, then remove hardened fat once it’s cold. Then heat up the liquid on the stovetop and return the meat to the liquid to warm up.
Serve on warm flour tortillas. Top with shredded lettuce, diced tomatoes, grated cheese, avocado slices, salsa, and whatever else you’d like.

Frozen in Colorado
Good morning from the frozen tundra of Colorado! Dang it’s been cold!! It’s been in the negative degrees for the last few days and it is bone chilling! It’s so deceiving when I look out the window . . . the sun is shining and it’s just plain pretty. Then you walk out and realize how crazy cold -9 degrees feels like!!
Kitchen Re-do, Memo Board
I found this burlap memo board at Hobby Lobby, half-off it was around $8 and is 16×20. I tend to gravitate toward anything and everything that has burlap on it, around it, in it!! I really liked the memo board idea for this specific spot in the kitchen where I had a large picture hanging, but it was too plain to hang it by itself so I decided to find a frame. Hobb’s (that’s what we call Hobby Lobby) open frames were also 50% off. I found this barnwood frame in the size I needed – sale price was $15 (no glass or hanger on the frame but the memo board had hangers). So my thought was that I’d just remove the plastic & hot glue the memo board into the frame . . . . yeah, that didn’t work. The memo board was not real pliable . . . soooo it was time to bring out the big guns (thanks Wayne, yes I still have your nail gun)!!! Oh my word, I forgot how much I loveeeeee power tools!! I was able to shoot some brad nails through the board into the frame. Seriously, I love nail guns!! I found the metal flower and number tag at a craft store in California. I just hot glued those to the frame – a simple & inexpensive idea!!
No Happy Song Today . . .
Well I just don’t even know what to say about the game yesterday. I’m still shaking my head!! The good news was we WERE in the Super Bowl!! Thanks Broncos for getting us that far!! The highlight of the whole event was this dessert. My friend Mia (I call her mama mia) brought this for the game. Oh my word, it was delicious!!! Ok – so I first heard this song on a commercial about speakers. You MUST watch the video – so fun!! It’s actually from the “Despicable Me 2” movie. You CANNOT NOT dance when you here it!! Be sure you have the volume on high!! This will be our “anthem” song on Sunday!!! 😉
