Greek Pasta Salad

greek pasta saladHope you all had a great 4th of July!  This weekend I had family visiting which included my mom & Pete from Albuquerque and my aunt from California (mom’s sister).  We had a bar-b-que over at my son’s house and he asked me to bring a pasta salad.  So instead of the regular mayo pasta salad I decided in honor of our “Greek” heritage I would make up a Greek Pasta Salad and it was yummy . . . (and yes, that fabulous bowl is from Home Goods) . . . Here you go:

Any Greek Vinaigrette Dressing
Your favorite pasta ( I used “Campanella”)
1 large jar Marinated Artichoke Hearts
Feta Cheese chopped in chunks
Kalamata Olives pitted & halved
Grape Tomatoes halved
A handful of Spinach leaves
Thinly sliced Red Onion
Sliced Cucumber

  1. Hi Ronda, We sure do enjoy your recipes – Thanks for including us! Just to let you know Wayne and I are on our way to Portland to see Steve and family. Our Grandson,Ryan is a new dad – a boy born on Fathers Day! So we are anxious to “Meet” him!! We didn’t really plan to go now – wanted to go this fall, but Wayne will be having knee replacement in Oct and a class regarding the procedure in Sept and therapy afterward – so fall is out.
