I had a bag of those mini carrots in my fridge and came across this recipe on . . . . . wait for it . . . . . Pinterest – LOL. Super simple and I’m not much of a veggie girl but these were pretty good – especially with my mashed potatoes and my country style ribs smothered in “Sweet Baby Ray’s” barbeque sauce – the best ever barbeque sauce! YUM!!!
Add carrots to a bowl & coat them with Extra Virgin Olive Oil and season with salt and pepper. Put on a cookie sheet lined with parchment paper, roast at 425 degrees for 20 min. (rolling them over about 1/2 way through). Return them to your bowl and drizzle honey over them. Enjoy!
