Yahooooo – My daughter-in-law, Tara was the winner of the “Chili Cook-Off”!!! Her chili was delicious! It was funny because the judges were all men and they ended up picking the one with chicken over the red meat varieties, lol! She even gave me the recipe to share with you . . . Congrats Tara!!! A BIG THANK YOU to everyone who participated!!!! We had 7 crockpots full of yumminess. Hmmmmm . . . what will the contest be next year?
White Chicken Chili
1 package McCormick White Chicken Chili Seasoning Mix
1 pound shredded or cubed rotisserie chicken meat (you can find it pre-packaged and “ready to use” at the King Soopers Deli counter)
1 tablespoon olive oil
1 small diced onion
1 teaspoon minced garlic
1 teaspoon salt
1 cup water
1 can diced tomatoes
1 can great northern (white) beans
Heat oil on medium heat. Sauté onion until translucent, add garlic towards the end so you don’t burn it. Add the chicken and salt, and cook until heated thoroughly and slightly browned. Stir in seasoning packet, water, tomatoes (undrained) and beans (undrained). Bring to a boil. Reduce heat, cover and simmer until it thickens up. Salt and pepper to taste. I like to put this in my crockpot and serve with a spread of Fritos, shredded cheese, sour cream and diced green onions.

🙂 It’ll prob take you 15 minutes from start to finish if you use the prepared rotisserie chicken.

I can’t take 100% credit because I consider this recipe “Semi-homemade”.. but sometimes I think semi-homemade recipes are just as good as scratch recipes!
